Key Lime Pie

Chris Clarke from Moustiers has sent in another recipe, this time a dessert for Valentine’s Day ...

An easy to make romantic dessert to serve up to your loved one on Valentine’s Day (even guy’s can do it!)

 

3 egg yolks
1 tsp of lime zest
300g tube of sweet condensed milk (lait concentre sucre)
Juice from 4 to 5 limes
Biscuit base made from crushed digestive, or similar biscuits, bound together with butter

 

Butter a 21 cm cake tin and spread base and sides with biscuit mixture. Place egg yolks and lime zest in a mixer bowl and beat on high speed until mix is glossy. Add condensed milk and beat until thick then stir in lime juice.

 

Pour mix on to biscuit base. Bake for 10 minutes until filling is barely set (180°C). Leave to cool and then refrigerate.

 

Place pie in freezer for 20 minutes then serve with crème fraiche.
