Courgette Relish

This is an excellent recipe to use up unwanted courgettes or to use up the large ones that you forgot about (overnight!!). Alter the size of your “cup” depending on how big a batch you want.

 

10 cups of peeled, grated courgettes
(cut away the centre seeds with
larger courgettes)
4 cups of finely chopped onion
1 red and 1 green pepper, finely chopped

 


Put all of the above in a large bowl with ½ cup of salt then cover with water and soak overnight. Drain the vegetables, rinse thoroughly with cold water and rinse again. Drain well, pressing the mixture to extract all the water you can. Next, in a pan, mix 5 cups of sugar with 2½ cups of vinegar (any kind).

Add 1 tablespoon of turmeric and 2 tablespoons of celery seeds. Boil for 30 mins (make sure your room is well ventilated as it is potent stuff!!). Mix 2 tablespoons of cornflour with a small amount of cold water, add to vinegar mixture and boil again for 5 mins.

 

Add vegetables and mix well, pour into sterilized jars/sealers. Keep for 2 months before eating. Makes a nice dip if mixed with some fromage frais.
